Job Purpose
- The Chef de Partie – Pastry Section is responsible for supervising and executing daily pastry production, ensuring consistency, quality, and compliance with food safety standards.
- The role involves preparing a variety of bakery and pastry items, training Commis Chefs, and maintaining smooth operations within the pastry section.
Key Responsibilities
- Prepare and produce a wide range of pastries, desserts, cakes, and baked goods as per recipes, production schedules, and company standards.
- Prepare and cook authentic North Indian dishes according to established recipes, quality standards, and presentation guidelines.
- Ensure products meet quality, portion, and presentation standards consistently.
- Monitor stock levels, assist in inventory management, and report shortages to supervisors.
- Maintain high standards of hygiene, cleanliness, and food safety (HACCP compliance).
- Assist in developing new pastry recipes, seasonal items, and innovative product ideas.
- Ensure all equipment in the pastry section is properly maintained, cleaned, and used safely.
- Coordinate with other sections (bread, savory, hot kitchen) to ensure smooth production flow.
- Support in large scale production for catering, retail, and wholesale orders.
- Adhere to production deadlines while minimizing waste and controlling food cost.
