Job Purpose
The Assistant Quality Assurance Manager supports the QA Manager in ensuring the company’s products and processes meet quality, safety, and regulatory standards, and also ensures that franchise locations comply with INDPT quality standards and operational procedures.
Assists in maintaining integrity, security and the quality of food and customer experience throughout INDPT facilities in UAE.
Ensure OHS is also implemented within the company.
Quality Assurance & Compliance
- Support the implementation of the Food Safety and Quality Management System (FSQMS).
- Conduct internal audits covering hygiene, documentation, traceability, cold chain, and CCP validation.
- Ensure regulatory compliance with national/international requirements and prepare outlets and central kitchens (CKs) for inspections.
Experience Quality Program
- Perform Experience Quality audits across all brands, evaluating host behavior, service rituals, emotional hospitality, ambience, scent, and lighting.
- Conduct mystery visits and follow-up verifications to classify non-conformities and track trends.
Central Kitchen & Production Oversight
- Verify CCPs, calibration, sanitation, line hygiene, and documentation.
- Support shelf-life studies, batch consistency, product standardization, recipe adherence, cooking techniques, and final product stability.
Supplier & Raw Material Approval
- Assist in supplier audits and evaluations, and review COAs, Halal certificates, microbiology reports, and GSO compliance.
- Maintain the Approved Product List (APL) and track non-conforming ingredients.
CAPA, Incident Management & Reporting
- Initiate, track, close, and verify the effectiveness of Corrective and Preventive Actions (CAPA), and conduct root-cause training. 1
- Maintain QA dashboards for scores, trends, and NC recurrence, and prepare weekly/monthly QA reports.
- Manage and support digital QA platforms such as Jolt, GoAudits, and Alert65.
Training & Development
- Develop and deliver training programs on food safety, hygiene, service rituals, sensory standards, and SOPs for FOH, BOH, and CK teams.
- Maintain competency assessments and training records.
Food Quality & Tasting
- Conduct structured sensory evaluations assessing aroma, appearance, texture, temperature, flavor, aftertaste, and mouthfeel.
- Validate recipe adherence, portioning, plating, and cooking methods while identifying faults (e.g., off-flavors, oxidation, oil degradation).
- Support CK with sensory templates/calibration and benchmark competitor products.
Cross-Functional & Franchise Support
- Collaborate with Operations, L&D, R&D, Marketing, and Maintenance.
- Support product launches, packaging trials, and equipment validation.
- Assist GCC franchisees with QA audits and onboarding.
Qualifications And Experiences
- Master degree in Food Science or equivalent in a related field.
- 3+ years of experience in Food Industries and 1+ years of management experience
- Demonstrate leadership and the ability to influence and collaborate with peers, develop and coach others, oversee and guide the work of other colleagues to achieve meaningful outcomes and create business impact.
- Demonstrates analytical and communication skills
Skills
- Experienced in implementing Food safety management systems (HACCP / ISO22000)
- Experienced in Sensory Evaluation of food
- Experience in Trainings
- Experience and security programs (TACCP / VACCP)
- Experience in Occupational health and safety
