Role Overview
A premium Japanese restaurant in Dubai is hiring an experienced Sushi and Hot Kitchen Chef.
The role requires strong expertise in Japanese cuisine and hands-on experience in sushi and hot-kitchen operations.
The chef will maintain food quality, presentation, consistency, and kitchen hygiene.
Responsibilities
- Prepare sushi, sashimi, nigiri, maki, robata, teppanyaki, ramen, tempura, and Japanese hot-kitchen dishes.
- Ensure consistent taste, quality, presentation, and portion control.
- Assist with menu development and signature Japanese dishes.
- Manage daily food preparation and kitchen operations.
- Manage food costing, portion control, inventory, and wastage.
- Train and support junior kitchen team members.
- Ensure compliance with HACCP, food safety, hygiene, and UAE regulations.
- Maintain the quality and freshness of premium seafood and Japanese ingredients.
Requirements
- Minimum 5 years of professional culinary experience.
- Proven experience as a Sushi Chef, Hot Kitchen Chef, Chef de Partie, or Senior Chef in a Japanese restaurant.
- Strong specialization in Japanese cuisine is essential.
