Role Overview
The company is seeking an experienced Executive Chef to lead culinary operations for a premium Japanese restaurant in Dubai, UAE.
The role requires expertise in authentic Japanese cuisine and professional kitchen team management.
Responsibilities
- Lead the complete kitchen operation and culinary team.
- Develop authentic and innovative Japanese menus and signature dishes.
- Maintain high standards across sushi, sashimi, nigiri, maki, robata, teppanyaki, ramen, tempura, and other specialties.
- Maintain food quality, taste, presentation, and portion control.
- Manage food costing, purchasing, inventory, wastage, and kitchen expenses.
- Train, develop, and supervise kitchen staff.
- Ensure compliance with HACCP, food safety, hygiene, and UAE regulations.
- Source high-quality Japanese ingredients and seafood.
- Collaborate with management on pricing, profitability, and restaurant operations.
Requirements
- At least 10 years of professional culinary experience and at least five years of Japanese cuisine experience.
- Proven experience as an Executive Chef, Head Chef, Chef de Cuisine, or Senior Sous Chef.
- Strong specialization in Japanese cuisine and knowledge of traditional and contemporary cooking techniques.
