Role overview
Assume responsibility for running the kitchen when the Chef de Cuisine is absent.
Provide friendly, courteous, efficient, and professional service at all times.
Leadership and operations
- Assist with staff employment and retention, guest feedback, company paperwork, budgets, and kitchen cost control.
- Attend required meetings when the Executive Chef is absent.
- Supervise new-staff training, staff timekeeping, and coordination with kitchen, restaurant, and other departments.
- Supervise smooth and efficient food production and service during shifts.
Food quality and service
- Ensure agreed standards of food preparation and presentation are supervised and maintained.
- Check all prepared mise en place and food stocks, including dry stores, and replenish them as necessary.
- Be aware of relevant food suppliers and products and oversee ordering.
Standards and compliance
- Promote safe use of the kitchen, equipment, and building under applicable health and safety regulations.
- Maintain hygiene standards and ensure food controls and correct temperatures are logged and followed.
