- Oversee key sections including dim sum and Chinese BBQ, maintaining high standards of authenticity
- Support menu development, recipe standardization, and food cost management
- Manage daily ordering, stock levels, and contribute to inventory and waste control
- Uphold HACCP, hygiene, and safety standards across all kitchen operations
Requirements
- 5–10 years of experience in a luxury hotel or Michelin level Chinese kitchen, ideally in Mainland China or Hong Kong
- Strong expertise in Cantonese and Szechuan cuisine, including dim sum and BBQ preparation
- Confident in leading a team, coaching others, and driving performance in a fast paced environment
- Solid understanding of HACCP, kitchen operations, and cost control
- Skilled in wok cooking techniques, traditional sauce preparation, and authentic cooking methods
- Organized, detail oriented, and communicates clearly in English

The Team
- You will be part of the award winning culinary team at Dai Pai Dong, our signature Chinese restaurant at Rosewood Abu Dhabi.
- Known for its vibrant interpretation of authentic Cantonese and Szechuan cuisine.
- You will work closely with the Chef de Cuisine and Executive Chinese Chef.
Your Role
- As Assistant Chef de Cuisine, you will play a key role in shaping the day to day success of Dai Pai Dong.
- Lead kitchen operations during your shift, ensuring every dish reflects authenticity, consistency, and creativity.
- Support the Chef de Cuisine in menu development, team leadership, and overall kitchen performance.
