The Team

  • You will be part of the award winning culinary team at Dai Pai Dong, our signature Chinese restaurant at Rosewood Abu Dhabi.
  • Known for its vibrant interpretation of authentic Cantonese and Szechuan cuisine.
  • You will work closely with the Chef de Cuisine and Executive Chinese Chef.

Your Role

  • As Assistant Chef de Cuisine, you will play a key role in shaping the day to day success of Dai Pai Dong.
  • Lead kitchen operations during your shift, ensuring every dish reflects authenticity, consistency, and creativity.
  • Support the Chef de Cuisine in menu development, team leadership, and overall kitchen performance.

How You’ll Make the Place

  • Lead kitchen operations during your shift, ensuring consistency in food quality, presentation, and taste.
  • Supervise and support kitchen associates, providing hands on guidance and training.
  • Oversee key sections including dim sum and Chinese BBQ, maintaining high standards of authenticity.
  • Support menu development, recipe standardization, and food cost management.
  • Manage daily ordering, stock levels, and contribute to inventory and waste control.
  • Uphold HACCP, hygiene, and safety standards across all kitchen operations.

Could This Be You?

  • 5–10 years of experience in a luxury hotel or Michelin level Chinese kitchen, ideally in Mainland China or Hong Kong.
  • Strong expertise in Cantonese and Szechuan cuisine, including dim sum and BBQ preparation.
  • Confident leading a team, coaching others, and driving performance in a fast paced environment.
  • Solid understanding of HACCP, kitchen operations, and cost control.
  • Skilled in wok cooking techniques, traditional sauce preparation, and authentic cooking methods.
  • Organized, detail oriented, and communicates clearly in English.
