Role Overview
Assist the Executive Pastry Chef with operational and administrative oversight of the main pastry production kitchens.
Support banquet, in-room dining, restaurant, cake shop, bakery, and related outlet operations.
Maintain pastry standards, efficiency, and alignment with current food trends and international expectations.
Pastry Operations
- Prioritize engagement across pastry production areas based on business volumes and related operating parameters.
- Create and maintain coordination between outlet kitchens, main pastry production, bakery operations, and related outlets.
- Assist with menu, pricing, and promotional event planning for banquets and restaurants.
- Support special requests, including dietary requirements.
- Keep pastry recipe costings current and aligned with selling prices.
- Provide manpower or pastry dishes for banquet and outside catering events when required.
- Stay updated on food and beverage trends to keep pastry offerings in line with or ahead of international standards.
Training and Department Support
- Support learning and development activities, including on-the-job and group training.
