Role Overview
Lead the sushi team and deliver precision, creativity, and consistency across the venue’s day-to-night culinary offering.
Key Responsibilities
- Lead and manage the sushi section, ensuring consistent quality, presentation, and speed across service.
- Oversee sourcing, quality control, and handling of fish and seafood to the highest food safety standards.
- Develop and refine sushi and sashimi menu items in line with the venue’s culinary concept.
- Train, supervise, and mentor the team.
- Maintain consistency and plating standards during high-volume peak periods.
- Manage stock levels, wastage control, and ordering for the sushi section.
- Coordinate with the Executive Chef and kitchen brigade on menu execution and service flow.
- Ensure full compliance with HACCP, food safety, and hygiene standards.
Ideal Candidate
- 3–4 years of experience in a similar role with high-volume, high-end execution.
- Standalone restaurant or beach club experience is preferred; candidates from 5-star hotel kitchens are also considered.
- Strong technical skill in sushi, sashimi, and Japanese knife techniques.
- Proven ability to maintain quality and consistency under high-volume pressure.
- Strong leadership and team management skills.
- Good English communication skills.
- Flexibility to work shifts, weekends, and public holidays in a fast-paced hospitality environment.
