Role overview
Mövenpick Resort Al Marjan Island is seeking an Executive Sous Chef to support culinary operations in a five-star resort environment.
The role supports the Executive Chef and leads kitchen and stewarding teams across high-volume banqueting and all-day dining operations.
Responsibilities
- Manage daily kitchen and stewarding operations with the Executive Chef.
- Monitor food costs, operating expenses, payroll, and departmental budgets.
- Cost menus and maintain standardized recipes and presentation guidelines.
- Recruit, train, coach, and develop kitchen and stewarding team members.
- Oversee food quality, stock control, purchasing, and storage procedures.
- Lead briefings, performance evaluations, and training initiatives.
- Monitor guest feedback and implement continuous improvement.
- Maintain kitchen equipment, workstations, and storage areas to high standards.
Qualifications and experience
- Proven senior culinary leadership experience, preferably as an Executive Sous Chef or Chef de Cuisine in a five-star UAE or GCC resort.
- Strong knowledge of food cost control, budgeting, and kitchen operations.
- Strong operational experience in banqueting and all-day dining, including major events and peak periods.
