Key Responsibilities
- Orchestrate the development and execution of innovative, high quality menus that meet stringent airline catering standards and passenger expectations.
- Oversee all kitchen operations, ensuring adherence to strict food safety protocols, hygiene standards, and efficient production processes.
- Manage and mentor a culinary team, fostering a culture of creativity, collaboration, and continuous improvement within the kitchen environment.
- Control food costs and manage budgets effectively, focusing on minimizing waste and maximizing profitability while maintaining quality.
- Collaborate with purchasing and supply chain teams to source high quality ingredients that meet airline specifications and dietary requirements.
- Conduct regular quality control checks and taste panels to ensure consistent food quality, presentation, and adherence to recipes.
- Stay abreast of culinary trends, passenger preferences, and airline industry regulations to continuously enhance menu offerings.
- Liaise with airline clients and stakeholders, providing menu presentations, responding to feedback, and building strong relationships.
- Lead the development of special meal requests and dietary specific menus to cater to diverse passenger needs and preferences.
- Ensure the kitchen is equipped with the latest technology and equipment, and that the team is trained on their proper use and maintenance.
