Role Overview
One & Only Resorts is recruiting a Commis II for the Italian kitchen at One&Only The Palm Hotel in Dubai.
The role supports food preparation, mise-en-place, cooking, service, and daily operations under senior chefs.
Key Duties and Responsibilities
- Assist with preparing, cooking, and presenting Italian dishes to resort standards and recipes.
- Prepare fresh pasta, risotto, pizzas, sauces, antipasti, and regional Italian dishes.
- Manage mise-en-place, portioning, food quality, presentation, and timely service delivery.
- Inspect ingredients and follow storage, labeling, and FIFO stock rotation procedures.
- Maintain hygiene, cleanliness, HACCP, food safety, and sanitation standards.
- Monitor food waste, stock levels, receiving, storage, and efficient ingredient use.
- Clean and maintain kitchen equipment and report defects or maintenance issues.
- Support senior chefs with training, daily specials, seasonal offerings, banquets, events, and high-volume operations.
- Coordinate with other kitchen sections and participate in briefings, training, and team meetings.
Candidate Requirements
- 1–2 years of experience in a quality hotel, resort, or restaurant environment.
- Experience in Italian cuisine is preferred.
