Role Overview
Commis 1 position in the Food and Beverage & Culinary department at JW Marriott Marquis Hotel Dubai.
The role prepares and presents food according to recipes, quality standards, presentation standards, and preparation checklists.
The position is non-management and scheduled full time.
Workplace and Schedule
- The role is based at Sheikh Zayed Road, Business Bay, Dubai, United Arab Emirates.
- The position is not remote and requires work in the hotel kitchen.
Core Responsibilities
- Set up the workstation and prepare mise en place before each service.
- Prepare, cook, and present dishes, including special meals, substitute items, cold foods, and daily specials.
- Regulate ovens, broilers, grills, and roasters while following recipes and preparation checklists.
- Ensure proper portioning, arrangement, garnish, food quality, and presentation.
- Monitor stock, thaw frozen food in the refrigerator, maintain food logs, and follow FIFO procedures.
- Maintain food safety, hygiene, sanitation, temperature control, and labeling standards.
- Minimize waste, support cost control, and inform the Chef about excess or low-quality food items.
- Communicate menu specials, out-of-stock items, and assistance needs during busy periods.
