About The Lab

Position Summary

  • We are seeking a skilled and passionate Chef de Partie (CDP) – Sushi to join our culinary team.

Key Responsibilities

  • Prepare and present sushi, sashimi, nigiri, maki rolls, and other Japanese dishes according to established recipes and standards.
  • Manage the sushi section during service, ensuring smooth and efficient operations.
  • Maintain consistency in food quality, taste, and presentation.
  • Ensure all ingredients are properly prepared, stored, and rotated according to food safety standards.
  • Monitor inventory levels and communicate stock requirements to the Sous Chef or Head Chef.
  • Minimize food waste through effective planning and portion control.
  • Ensure compliance with HACCP, food safety, sanitation, and hygiene regulations.
  • Assist in training and guiding Commis Chefs and junior kitchen team members.
  • Support menu development and contribute ideas for new dishes and seasonal offerings.
  • Maintain cleanliness and organization of the sushi station and kitchen areas.
  • Collaborate closely with the kitchen and service teams to ensure an exceptional dining experience.

Qualifications & Requirements

  • Diploma or certification in Culinary Arts is preferred.
  • Minimum 2–4 years of experience as a Sushi Chef or Chef de Partie in a reputable Japanese restaurant.
  • Strong knowledge of Japanese cuisine, sushi preparation techniques, seafood handling, and knife skills.
  • Understanding of food safety, hygiene, and HACCP standards.
  • Ability to work efficiently in a fast paced, high volume environment.
  • Strong organizational and time management skills.
  • Ability to work collaboratively within a multicultural team.
  • Flexibility to work shifts, weekends, and public holidays.
