- Prepare and present sushi, sashimi, nigiri, maki rolls, and other Japanese dishes according to established recipes and standards
- Manage the sushi section during service, ensuring smooth and efficient operations
- Maintain consistency in food quality, taste, and presentation
- Ensure all ingredients are properly prepared, stored, and rotated according to food safety standards
- Monitor inventory levels and communicate stock requirements to the Sous Chef or Head Chef
- Minimize food waste through effective planning and portion control
- Ensure compliance with HACCP, food safety, sanitation, and hygiene regulations
- Assist in training and guiding Commis Chefs and junior kitchen team members
- Support menu development and contribute ideas for new dishes and seasonal offerings
- Maintain cleanliness and organization of the sushi station and kitchen areas
- Collaborate closely with the kitchen and service teams to ensure an exceptional dining experience
Requirements
- Diploma or certification in Culinary Arts preferred
- Minimum 2 4 years of experience as a Sushi Chef or Chef de Partie in a reputable Japanese restaurant
- Strong knowledge of Japanese cuisine, sushi preparation techniques, seafood handling, and knife skills
- Understanding of food safety, hygiene, and HACCP standards
- Ability to work efficiently in a fast paced, high volume environment
- Strong organizational and time management skills
- Ability to work collaboratively within a multicultural team
- Flexibility to work shifts, weekends, and public holidays

Qualifications & Requirements
