Food Safety and Hygiene
- Supervise the stewarding department and maintain sanitation and hygiene standards across kitchen areas, equipment, and food preparation areas.
- Implement and oversee hotel HACCP policies in compliance with local legislation and international standards.
- Develop, implement, and continuously improve food safety procedures.
- Monitor cleaning and hygiene standards in food preparation, dishwashing, and storage areas.
Audits and Training
- Conduct regular HACCP audits and training for team members.
- Manage HACCP audits, third-party visits, and inspections from authorities.
- Train staff on food safety, hazard identification, and near-miss reporting.
- Ensure activities comply with local and hotel-specific standards.
Incidents and Service Standards
- Assist in preparing accident reports in accordance with prescribed standards.
- Ensure health and safety regulations are followed by all team members.
- Handle food safety-related guest complaints and escalate unresolved incidents to management.
- Maintain personal hygiene and grooming standards within the team.
- Ensure department members demonstrate required service standards.
Candidate Profile
- 5–8 years of experience administering HACCP and ensuring food safety compliance.
- At least 5 years of experience in a five-star luxury hotel with knowledge of luxury service standards.
- Certified HACCP Auditor with expertise in local food safety legislation and Dubai Municipality regulations.
- Food Safety Certification and advanced HACCP certification with staff training experience.
- Fluent written and spoken English with excellent communication skills.
- Attention to detail and a quality-focused commitment to hygiene and safety standards.
