Job Summary
FAT MO' RESTAURANT is seeking a skilled and experienced Steak / Butchery Chef for its culinary team.
The role covers premium beef selection, butchery, portioning, steak preparation, cooking, hygiene, consistency, and waste reduction.
Key Responsibilities
- Select, inspect, trim, debone, portion, and prepare beef according to restaurant standards.
- Apply knowledge of premium beef cuts including ribeye, striploin, tenderloin, sirloin, T-bone, porterhouse, and tomahawk.
- Perform professional meat fabrication and precise portion control.
- Prepare steaks for grilling, pan-searing, roasting, and other cooking methods.
- Maintain consistent steak thickness, weight, doneness, presentation, and quality.
- Manage aged beef where applicable and monitor meat quality, freshness, temperature, and storage.
- Follow FIFO stock rotation, minimize waste, and monitor inventory and shortages.
- Maintain knife skills, safely operate butchery equipment, and keep work areas hygienic.
- Follow HACCP, food safety, hygiene, and company standards.
- Coordinate with kitchen leadership and train junior staff when required.
Requirements
- Minimum 2–4 years of professional experience in steakhouse, fine dining, hotel, or professional butchery operations.
