Job Summary

Accountable for the success of daily kitchen operations while personally performing culinary tasks and leading kitchen staff.

Responsible for guest and employee satisfaction, operating budget, product quality, sanitation, and food standards.

Supports the Executive Chef and supervises kitchen areas and staff during assigned shifts.

Education and Experience

  • High school diploma or GED plus 4 years of experience in culinary, food and beverage, or a related professional area.
  • Alternatively, a two-year degree in Culinary Arts, Hotel and Restaurant Management, or a related major plus 2 years of relevant experience.

Culinary Operations

  • Manage kitchen shifts and comply with food and beverage policies, standards, and procedures.
  • Estimate weekly production needs and communicate daily requirements to kitchen personnel.
  • Assist the Executive Chef with kitchen operations and preparation.
  • Prepare and cook foods for regular service, special guests, and functions.
  • Maintain food quality, presentation, purchasing, receiving, storage, sanitation, temperature, legal, and regulatory standards.
  • Operate and maintain kitchen equipment and report malfunctions.

Kitchen Leadership

  • Supervise cooks and food preparation workers and lead shifts while personally preparing food to required specifications.
  • Maintain employee productivity, communicate performance expectations, recognize success, and administer property policies consistently.
  • Build trust and cooperation among team members and model appropriate workplace and guest service behaviors.

Guest Service

  • Provide service that supports guest satisfaction and retention and manage day-to-day quality and service standards.
  • Interact with guests to obtain feedback on product quality and service levels.
  • Handle guest problems and complaints and empower employees to provide excellent customer service.

Goals and Scheduling

  • Achieve performance, budget, and team goals and develop plans to prioritize and organize work.
  • Use the Labor Management System to schedule employees according to business demands and track time and attendance.
  • Train employees in safety procedures.

People Development

  • Identify development needs, coach and mentor employees, and provide guidance and feedback to improve service.
  • Participate in employee performance appraisals and bring relevant issues to department management and Human Resources.
  • Attend and participate in pertinent meetings and communicate information to supervisors, coworkers, and subordinates.
