Role Description

  • The Senior Sous Chef is a full time, on site role based at Waldorf Astoria Doha West Bay.
  • Supports the Executive Chef in overseeing daily kitchen operations, including planning menus, supervising food preparation, and ensuring consistent quality and presentation across all outlets.
  • Leads and mentors kitchen brigade members, coordinates staff schedules, and helps manage inventory, ordering, and food cost control.
  • Responsibilities include maintaining strict food safety and hygiene standards, collaborating with restaurant and banquet teams on special events, and contributing to new dishes and culinary innovations.
  • Also involves monitoring performance, training team members, and fostering a professional, inclusive, and safe working environment.

Qualifications

  • Demonstrated expertise in professional culinary techniques, food preparation, and high volume kitchen operations.
  • Strong leadership, team management, and mentoring skills, with the ability to coordinate a diverse culinary team.
  • Solid understanding of food safety, hygiene regulations, and quality control practices in luxury hospitality environments.
  • Experience with menu planning, costing, inventory management, and supplier coordination.
  • Ability to work effectively under pressure, prioritize tasks, and maintain high standards during peak service periods.
  • Excellent communication and collaboration skills to work closely with front of house and banquet teams.
  • Prior experience as a Sous Chef or Senior Sous Chef in upscale or luxury hotels or fine dining restaurants.
  • Relevant culinary diploma, degree, or equivalent professional training; additional certifications in food safety are an advantage.
  • Flexibility to work varied shifts, including weekends and holidays, as required by hotel operations.
  • Passion for hospitality, commitment to continuous improvement, and openness to diverse cultures and perspectives.
