Business Performance

  • Plan the outlet budget and review monthly revenue and expenditure forecasts.
  • Analyze and submit month-end reports and identify deviations from business plan goals.
  • Participate in management meetings and develop the annual business plan related to the outlet.
  • Implement profit enhancement programs with kitchen and marketing teams and report promotion results.
  • Keep food and beverage, productivity, labor, and operating supply costs aligned with budget.

Restaurant and Bar Operations

  • Conduct daily briefings so team members receive pertinent operational information.
  • Supervise team members and ensure assigned outlet tasks meet timing and departmental standards.
  • Build guest relationships, personalize service, and handle complaints and comments efficiently.
  • Manage cashier and bar administration, communication logs, and notice boards.
  • Monitor equipment and stock levels to prevent shortages affecting operations or guests.
  • Check outlet and back-of-house cleanliness for compliance with sanitation and hygiene rules.
  • Maintain knowledge of food and beverage services, preparation methods, outlets, and hotel features.
  • Ensure health, safety, security, training, shift handover, and peak-period support procedures.

Team Management

  • Interview, select, and recruit outlet employees.
  • Identify and develop team members with potential.
  • Conduct performance reviews and monitor appearance, attitude, and professionalism.
  • Develop and maintain staff training programs focused on changing business needs.
  • Prepare weekly staff schedules based on anticipated business, budgets, and service standards.
  • Prepare payroll and gratuity reports.
  • Conduct monthly departmental meetings to share information, gather feedback, and resolve issues.

Knowledge and Experience

  • Secondary or high school education.
  • Additional food and beverage certification is an advantage.
  • Good reading, writing, and oral proficiency in English.
  • Other languages and basic local-language understanding are an advantage.
  • At least three years of relevant experience in a similar capacity.
  • Working knowledge of Microsoft Excel, Word, and PowerPoint.
  • Professionalism, human resources management capability, and business acumen.
