Responsibilities
- Lead and oversee daily production of tiramisu and other approved dessert products.
- Follow standardized recipes, specifications, preparation methods, and quality standards.
- Ensure consistency in taste, texture, portion size, presentation, and product quality across batches.
- Manage and supervise the pastry production team, including scheduling, task allocation, training, and performance.
- Plan production requirements based on sales forecasts, orders, and operational needs.
- Establish and maintain efficient production workflows and procedures.
- Improve production efficiency and reduce wastage and costs without compromising quality.
- Train the production team to consistently execute recipes and standards.
Qualifications
- Similar experience as a Pastry Chef, Pastry Production Manager, or in a similar senior pastry role is required.
- Experience with Italian pastry or desserts is highly preferred.
- Strong professional experience in dessert and pastry production is required.
- High-volume commercial environment experience is preferred.
- Strong knowledge of professional pastry techniques, ingredient handling, portion control, and recipe scaling is required.
- Commercial awareness of food cost, yield, wastage, and inventory control is required.
- The ability to work hands-on while managing a production team is required.
- High attention to detail and commitment to quality are required.
- Good communication and leadership skills are required.
