Role Overview
Lead product development and innovation across sweet-goods categories, with primary responsibility for cake and donut icings.
Oversee product improvement, scale-up, commercialization, quality, manufacturing capability, and alignment with customer and business objectives.
The role requires strong technical bakery expertise, project leadership, and hands-on knowledge of cakes, donuts, icings, glazes, fillings, and related applications.
Primary Responsibilities
- Lead development and commercialization of icings, glazes, fillings, frostings, and other sweet-goods finishing applications.
- Manage projects from concept and formulation through plant scale-up, first production, and commercialization.
- Evaluate ingredients and technologies and optimize texture, viscosity, stability, adhesion, appearance, flavour, shelf life, and application.
- Develop project plans, product specifications, testing protocols, sample presentations, and commercialization activities.
- Provide technical leadership during benchtop, product, plant, packaging-line, and production trials.
- Conduct sensory evaluations and support product quality, food safety, efficiency, cost optimization, and manufacturing capability.
- Ensure regulatory compliance for ingredient declarations, allergen statements, labelling, and supplier documentation.
