Job Summary
Oversee daily kitchen operations and ensure consistent delivery of high-quality food according to approved recipes, food safety standards, and service requirements.
This is a hands-on operational role requiring leadership, culinary knowledge, organisation, and effectiveness in a fast-paced hospitality environment.
Key Responsibilities
- Oversee food preparation, cooking, plating, service, cleaning, and closing procedures.
- Lead and allocate duties to chefs, cooks, kitchen assistants, and other kitchen team members.
- Prepare and serve food according to menus, recipes, presentation standards, portion sizes, and service timings.
- Monitor food quality, taste, temperature, presentation, and consistency.
- Ensure compliance with HACCP, food safety, allergen controls, hygiene, and health and safety requirements.
- Maintain records for temperatures, cleaning, stock rotation, waste, and other kitchen controls.
- Manage stock, check deliveries, verify product quality and quantities, and maintain proper FIFO storage.
- Coordinate with suppliers, service teams, management, and other departments.
- Monitor food costs, portion sizes, waste, and efficient use of resources.
- Maintain kitchen equipment, utensils, surfaces, storage areas, and facilities in a clean and safe condition.
- Train and coach kitchen staff on culinary standards, food safety, hygiene, and company procedures.
