Role Overview
Four Seasons Dubai at DIFC is hiring a Junior Sous Chef for its Japanese kitchen and fine-dining operation.
The role supports seasonal kaiseki menus, daily kitchen production, quality standards, and team coordination.
What You Will Do
- Assist with seasonal kaiseki menu preparation and execution under the Sous Chef and Head Chef.
- Manage mise en place, food preparation, plating, and daily Japanese kitchen operations.
- Maintain consistency, quality, cleanliness, and HACCP-compliant hygiene standards.
- Supervise and guide demi chefs, commis, and trainees as needed.
- Support menu development, inventory checks, requisitions, briefings, and peak service operations.
- Communicate with service staff and contribute to a respectful, improvement-focused kitchen culture.
What You Will Bring
- Minimum five years of Japanese fine-dining experience, including kaiseki or multi-course cuisine.
- Strong knowledge of traditional Japanese cooking techniques and seasonal ingredients.
- Strong knife skills and an eye for elegant, precise plating.
- Team-oriented, proactive, and responsible work ethic.
- Ability to work efficiently in a fast-paced environment.
- Knowledge of basic food cost management and kitchen procedures.
