Role Purpose

  • The Head Pastry Chef Multi Site is responsible for leading pastry development, operations, and team capability across multiple brands and venues.
  • The role combines creative and technical leadership with structured execution and cross site operational control in a fast growing hospitality platform.

Job Summary

  • Leads development, execution, and continuous improvement of pastry and dessert offerings across multiple concepts.
  • Responsible for creating commercially viable dessert ranges, standardizing recipes, and supporting BOH planning during fit out.

Multi Brand Pastry Development

  • Lead pastry and dessert menu development across multiple brands.
  • Develop structured recipe packs, costing sheets, plating guides, and pastry SOPs.
  • Identify and develop signature items and scalable core recipes.

Brand Build Up and Project Development Support

  • Participate in early stage concept development from a pastry perspective.
  • Review BOH layouts and pastry section workflows for practicality and efficiency.
  • Advise on pastry equipment specification and production planning.

Pre Opening and Mobilization

  • Lead pastry execution for pre opening phases across new sites.
  • Recruit, train, and support pastry teams for new openings.
  • Deliver structured product training and hands on support during soft openings.

Commercial and Cost Oversight

  • Ensure all pastry items are accurately costed and aligned with target GP.
  • Monitor wastage, portion control, and production efficiency.
  • Work with Procurement to ensure cost effective supply of ingredients.

Quality, Compliance, and Governance

  • Maintain highest standards of pastry quality and presentation.
  • Ensure compliance with food safety, hygiene, and HACCP standards.
  • Maintain version control of recipes and development trackers.

Team Leadership and Capability Building

  • Lead, coach, and develop pastry teams across multiple sites.
  • Support hiring decisions and pastry capability planning.
  • Build training structures for replicable standards.

Cross Functional Collaboration

  • Work with Operations, Brand, Procurement, PMO, and Marketing teams.
  • Support menu integration into POS systems and training manuals.
  • Contribute to product presentations and launch activity.

Requirements

  • Minimum 7 10 years of pastry experience in premium hospitality.
  • Strong leadership experience in a senior pastry role across multiple outlets.
  • Proven capability in pastry development, costing, and operational rollout.
  • Experience in pre opening environments and pastry training.
  • Commercially literate with GP and cost control awareness.
  • UAE or GCC experience preferred.
  • Diploma or certification in Pastry Arts or related discipline preferred.
