Position Objective
Lead the daily kitchen operation and ensure food is prepared and presented according to established standards.
Maintain high standards of cleanliness, hygiene, equipment condition, and operational performance throughout kitchen areas.
Kitchen Operations
- Supervise kitchen staff during shifts to ensure food preparation, organization, and presentation standards are followed.
- Coordinate with Pastry Chefs, Sous Chefs, managers, and stewards to support timely preparation, service, cleanliness, and hygiene.
- Manage food preparation, cooking, presentation, supervision, training, storage, and day-to-day kitchen operations.
- Check equipment condition and issue maintenance requests when repairs are required.
- Order fresh and dry goods daily, maintain par levels, and minimize spoilage and wastage.
- Support menu and recipe development, seasonal specialties, creative selling, merchandising, decoration, and presentation ideas.
Cost and Staff Management
- Control portion sizes, waste, food costs, departmental expenditure, and performance against budget targets.
- Determine supply quality with the Sous Chef and maintain required stock quality and freshness.
- Train kitchen staff according to planned programs and correct production errors or methods when necessary.
