Company Description
SLS Dubai Hotel and Residences is a luxury lifestyle five-star city hotel under Ennismore and the wider Accor group.
The property includes hotel rooms, hotel apartments, and branded residences across 75 floors in Dubai.
Role Overview
The Head Chef will lead and oversee daily culinary operations for Carna.
The role is responsible for kitchen performance, culinary quality, team development, and guest experience.
Key Responsibilities
- Lead daily kitchen operations and organize mise en place, production, service, staffing, scheduling, and briefings.
- Maintain food quality, recipe compliance, presentation, consistency, portion control, and the steakhouse culinary identity.
- Supervise, train, motivate, and develop the culinary team.
- Manage meat preparation, butchery, cooking techniques, product utilization, food costs, yields, and wastage.
- Coordinate with suppliers, Purchasing, Restaurant Management, and Front of House teams.
- Ensure food receiving, storage, labeling, handling, hygiene, sanitation, and HACCP compliance.
- Maintain culinary records, production sheets, temperature logs, and departmental documentation.
- Support banquet, VIP, promotional, and special dining requirements and address culinary-related guest feedback.
