Under the general supervision of the Line Leader or Production Supervisor; the Dough Controller’s primary responsibility is to coordinate closely with the Line Operators to let them know where the required Dough for the Line is and how it is organized so the Line Operator can follow FIFO.

They will be required to manage all aspects of the dough creation and ensure the correct temperatures are used and storage process is followed.

Shift: Night (11 PM to 7 AM)

• Obtains and reviews all documentation for making batches.
• Responsible for filling up the tags with all the required information for the Dough Racks.
• Ensure proper and safe operation of the equipment including cleaning and inspection of equipment.
• Responsible for ensuring work area is clean and free of hazards
• Responsible for practicing and adhering to Food Safety, GMP’s (Good Manufacturing Practices) and Health and Safety.
• Regularly monitor that the product conforms to quality specifications
• Responsible for coordinating with the Line Operator.
