Responsibilities
- Develop and refine a nut based chocolate filling with a strong health focus
- Explore healthier sweetening approaches and nut forward formulations with high real nut content
- Produce small scale prototypes and iterate based on sensory, texture, and nutritional feedback
- Design 2 3 formulation routes for a nut filling from indulgent to healthiest possible
- Run lab/kitchen trials to validate texture, shelf life, and flavor performance in chocolate bar applications
- Deliver documented recipes, process parameters, and a clear technical handover ready for scaling
Requirements
- Proven background as a chocolatier or confectionery technologist (portfolio or brand references required)
- Hands on experience developing fillings, especially nut based creams or spreads
- Track record working on healthy / better for you chocolate or dessert products
- Access to a lab, pilot kitchen, or small scale production facility for prototyping within the UAE
