Job Summary
The Chef de Partie – Bakery is responsible for managing the bakery section and ensuring the preparation, baking, and presentation of all breads, Lebanese flatbreads, manakish, pastries, dough products, and bakery items according to the restaurant's quality standards.
The role requires maintaining consistency, freshness, hygiene, and efficient bakery operations.
Food Preparation & Production
· Prepare and bake all bakery products according to approved recipes and standards.
· Produce Lebanese breads, Arabic bread, manakish, saj products, pizza dough, and other specialty bakery items.
· Prepare doughs, fillings, toppings, and bakery ingredients for daily production.
· Ensure consistency in texture, flavor, appearance, and portion size.
· Monitor proofing, fermentation, baking temperatures, and baking times to achieve optimum results.
Section Management
· Take full responsibility for the bakery section during assigned shifts.
· Plan daily production requirements based on business needs.
· Ensure adequate stock of flour, yeast, dairy products, toppings, and bakery ingredients.
· Coordinate with kitchen and service teams to ensure timely product availability.
Quality Control
· Maintain high standards of product quality, freshness, and presentation.
· Inspect ingredients and finished products to ensure compliance with quality standards.
· Monitor product shelf life and freshness.
· Report any quality concerns, shortages, or equipment issues to senior chefs.
Hygiene & Safety
· Follow HACCP, food safety, and sanitation standards at all times.
· Ensure proper storage and rotation of ingredients using FIFO procedures.
· Maintain cleanliness of bakery equipment, ovens, workstations, and storage areas.
· Comply with all health and safety regulations.
Team Support
· Assist in training and supervising Commis Chefs and Bakery Assistants.
· Support the Sous Chef and Head Chef in daily operations.
· Promote teamwork and maintain a positive and professional work environment.
Requirements
· Minimum 2–4 years of experience in a bakery or similar position.
· Experience in Lebanese, Arabic, or Middle Eastern bakery production preferred.
· Strong knowledge of dough preparation, fermentation, baking techniques, and bakery equipment.
· Understanding of food safety and hygiene standards.
· Ability to work under pressure and meet production deadlines.
· Strong organizational and time management skills.
