Position Overview
Prepare, cut, portion, and display meat, poultry, and seafood products while maintaining quality, hygiene, and food safety standards.
Key Responsibilities
- Receive, inspect, and store fresh meat, poultry, and seafood products.
- Cut, trim, debone, fillet, portion, and prepare products according to customer and business requirements.
- Maintain displays, labeling, packaging, storage, temperature control, and cold-chain procedures.
- Clean and sanitize knives, cutting equipment, work surfaces, storage areas, and display counters.
- Monitor freshness, remove products that fail quality standards, and minimize waste.
- Assist customers with product selection and advice on cuts, portions, and preparation methods.
- Maintain stock levels and report shortages, damaged products, or quality concerns.
- Follow safe working practices when handling knives, machinery, and other equipment.
- Support general shop and department duties as required.
Requirements
- Previous experience in butchery, fishmongery, or a similar food preparation role.
- Knowledge of meat, poultry, and seafood products and different cutting techniques.
- Strong knife-handling and filleting skills.
- Knowledge of food hygiene, sanitation, and HACCP principles.
- Ability to work in a chilled environment, stand for long hours, and handle food products safely.
