**JOB TITLE:** Kitchen Supervisor / Chef Leader **REPORTS TO:** Executive Chef / Operations Manager / Restaurant Owner ### Job Summary The Kitchen Supervisor / Chef Leader is responsible for leading and supervising all kitchen operations while actively participating in food preparation and cooking. This role combines leadership, culinary expertise, quality control, staff training, and operational management to ensure exceptional food quality, kitchen efficiency, food safety compliance, and team performance. ### Key Responsibilities #### Kitchen Leadership & Supervision * Lead, motivate, and supervise kitchen staff during daily operations. * Assign duties and monitor staff performance. * Maintain discipline, teamwork, and a positive working environment. * Conduct on-the-job training and develop kitchen team members. * Ensure all recipes, standards, and procedures are followed consistently. #### Food Preparation & Cooking * Prepare and cook menu items according to restaurant standards. * Demonstrate advanced skills in: * Pizza preparation, dough management, baking, and topping execution. * Pasta preparation, sauces, and plating. * Burger preparation, grilling, assembly, and presentation. * Other menu items as required by the restaurant concept. * Monitor food quality, taste, texture, and presentation before service. #### Quality Control * Ensure consistency of all food served to guests. * Conduct regular quality checks on ingredients and finished products. * Maintain recipe standards and portion control. * Minimize food waste through proper planning and supervision. #### Inventory & Cost Control * Monitor stock levels and kitchen supplies. * Assist in ordering ingredients and receiving deliveries. * Ensure proper storage and stock rotation (FIFO). * Help control food cost and kitchen expenses. * Report shortages, wastage, and equipment issues. #### Food Safety & Hygiene * Ensure compliance with food safety regulations and HACCP standards. * Maintain a clean and organized kitchen at all times. * Monitor proper sanitation procedures and personal hygiene standards. * Ensure all kitchen equipment is operated safely. #### Operational Management * Coordinate with front-of-house staff to ensure smooth service. * Assist in menu development and recipe improvement. * Support opening and closing kitchen procedures. * Handle kitchen challenges and solve operational issues efficiently. * Ensure service runs smoothly during peak business hours. ### Qualifications * Minimum 3–5 years of kitchen experience, including supervisory responsibilities. * Strong knowledge of pizza, pasta, burger, and international cuisine preparation. * Proven leadership and team management skills. * Strong understanding of food safety and sanitation standards. * Ability to work under pressure in a fast-paced environment. * Excellent communication and organizational skills. ### Skills Required * Kitchen Leadership * Team Management * Pizza Making & Dough Fermentation * Pasta Preparation * Burger Production * Food Cost Control * Inventory Management * HACCP & Food Safety * Staff Training & Development * Problem Solving * Time Management ### Performance Expectations * Consistent food quality and presentation. * Efficient kitchen operations. * Reduced food waste and controlled food costs. * Strong team performance and staff development. * Compliance with all food safety and hygiene standards. * High guest satisfaction through excellent food execution.
