Responsibilities
- Prepare sushi and sashimi items, including cutting and filleting seafood, cooking rice, and assembling rolls, nigiri, and other Japanese dishes according to restaurant standards
- Ensure ingredient quality, maintain food safety and hygiene practices, and organize the sushi station
- Coordinate with the kitchen team during service
- Monitor stock levels, assist with ordering and inventory
- Support menu development and specials under the guidance of senior chefs
- Work flexible hours, including evenings, weekends, and holidays
Requirements
- Strong food preparation skills including mise en place, portioning, and plating
- Solid cooking and culinary skills with focus on Japanese cuisine and sushi techniques
- Hands on experience working with seafood, including selection, handling, and cutting
- Knowledge of hygiene standards and food safety regulations
- Previous experience as a Sushi Chef or in a Japanese restaurant (Commis to DCDP level preferred)
- Ability to work efficiently in a fast paced environment and as part of a multicultural team
- Attention to detail, good knife skills, and commitment to quality and presentation
- Willingness to work shifts, including weekends and public holidays
- Basic English communication skills are an advantage
