· 3+ years of professional culinary experience, specifically in sushi preparation and Asian cuisine.
· In-depth knowledge of different types of fish and seafood, including their characteristics and seasonality.
· Proficiency in various sushi-making techniques, including rolling, cutting, and shaping.
· Exceptional precision in knife work for slicing and preparing fish and other ingredients.
· Ability to create visually appealing, aesthetically pleasing, and well-presented sushi dishes.
· Strong understanding and strict adherence to food safety and sanitation regulations, especially for handling raw fish.
· Ability to work effectively under pressure in a high-volume, fast-paced kitchen environment.
· Strong organizational and time management skills to handle prep work and orders efficiently.
· Ability to collaborate effectively with kitchen staff, waitstaff, and management.
· Clear and effective communication skills for interacting with customers and team members.
· A valid food handler’s permit or other relevant food safety certification.
· Willingness to work evenings, weekends, and holidays, as required.
