Role Description

  • This is a full time, on site South Indian Cook role based in the United Arab Emirates. The South Indian Cook will be responsible for planning and preparing a variety of authentic South Indian dishes such as idli, dosa, vada, sambar, rasam, curries, chutneys, biryani, and other regional specialties.

Daily Tasks

  • Perform mis en place, cooking and plating dishes according to set recipes and standards.
  • Maintain cleanliness and hygiene in the kitchen.
  • Ensure proper storage and rotation of ingredients.
  • Manage cooking timelines during peak hours.
  • Coordinate with kitchen staff.
  • Adjust recipes based on dietary requirements and portion sizes.
  • Monitor inventory, assist with menu planning, minimize food waste.
  • Comply with food safety and UAE health regulations.

Qualifications

  • Strong proficiency in South Indian cuisine, including breakfast items (idli, dosa, vada), curries, gravies, rice dishes, and a variety of chutneys and accompaniments.
  • Hands on experience with traditional South Indian cooking methods and equipment, such as tawa, dosa pans, steamers, and pressure cookers.
  • Solid knowledge of ingredient selection, spice blends, and flavor balancing specific to different South Indian regions (e.g., Tamil, Kerala, Andhra, Karnataka styles).
  • Proven ability to maintain high standards of food hygiene, safety, and kitchen cleanliness, following HACCP or similar food safety guidelines.
  • Experience in volume cooking, portion control, and time management in a professional or commercial kitchen setting.
  • Capability to plan prep work, organize mis en place, and coordinate with team members to ensure smooth kitchen operations during busy service periods.
  • Basic inventory skills, including monitoring stock levels, reporting shortages, and helping reduce food waste through efficient storage and usage.
  • Good communication and teamwork skills, with the ability to follow instructions, maintain a respectful work environment, and support colleagues as needed.
  • Flexibility to work shifts, weekends, and holidays as required by business needs.
  • Prior experience as a South Indian Cook or Commis in hotels, restaurants
