Accor is seeking an experienced Thai Sous Chef to support kitchen operations in Abu Dhabi, United Arab Emirates.
The Sous Chef works closely with the Head Chef and assumes responsibility for kitchen operations during the Head Chef's absence.
Responsibilities
- Lead daily food preparation, cooking, and service while maintaining established quality standards.
- Manage the kitchen team during the Head Chef's absence and foster a positive, inclusive environment.
- Inspect kitchen and food preparation areas for cleanliness, organization, and food safety compliance.
- Control portions, reduce waste, and support food cost efficiency.
- Verify order accuracy and timely delivery for service.
- Oversee food storage, stock rotation, and inventory security.
- Check delivered goods against documentation for quantity and quality.
- Collaborate with other departments to support hotel operations.
- Maintain food cost percentages within budget parameters.
- Ensure compliance with health, safety, food hygiene, and HACCP regulations.
- Train, develop, and mentor kitchen staff.
- Report equipment defects, safety concerns, and incidents according to hotel procedures.
Required qualifications
- Culinary degree, diploma, or relevant professional culinary qualification.
- Experience as a Sous Chef or in a similar senior culinary leadership role within luxury hospitality or fine dining.
- Expertise in culinary traditions, techniques, ingredients, food preparation, and cooking methods.
- Knowledge of food safety, hygiene, sanitation standards, and HACCP principles.
- Proficiency in food cost control, portion management, inventory tracking, and waste reduction.
- Ability to lead, motivate, train, and develop a diverse culinary team.
- Organizational, time management, communication, interpersonal, and attention-to-detail skills.
- Proficiency in English.

- Creative and innovative approach to menu development and culinary problem-solving.
- Luxury hospitality experience with exposure to international cuisines.
- Ability to manage stress and maintain resilience in high-pressure kitchen settings.
- Analytical skills for assessing operational efficiency and implementing improvements.
- Experience with kitchen management systems and culinary software.
- Passion for mentoring emerging culinary talent.
- Flexibility to work varied shifts, weekends, and holidays.
