Role Overview
The Second Cook / General Helper supports kitchen operations and maintenance at Royal Roads University.
The role includes food preparation, sanitation, cold-food presentation, food storage, and stock utilization.
Responsibilities
- Maintain food preparation quality according to chef requirements and FoodSafe protocols.
- Prepare sandwiches by cutting bread, slicing meats and cheese, and arranging fillings and garnishes.
- Inspect the appearance and presentation of cold food.
- Control storage of food in refrigerators and freezers.
- Prepare and set up a full salad bar for lunch and supper.
- Use food stocks effectively.
- Clean and sanitize kitchen areas, tools, equipment, pots, and dishes.
Required Qualifications
- FoodSafe Level I certification.
- Ability to obtain a score of 80% or higher on the mandatory WHMIS test.
Preferred Qualifications
- At least 2 years of cooking experience in a similar, hotel, or institutional environment is preferred.
- SafeCheck advanced food safety certification or HACCP certification is an asset.
