Responsibilities
- Operate and monitor industrial cooking/mixing machine and industrial sauce processing system to ensure safe, efficient, and hygienic production of sauces and dressings
- Operate industrial cooking system for batch cooking, mixing, emulsifying sauces, maintaining correct temperature, mixing speed, and time
- Operate sauce processing and cooking system for transfer, processing, and discharge of sauce, feeding sauce to packing machines
- Follow recipe instructions for each batch and load raw materials correctly
- Monitor batch consistency, colour, and texture; identify abnormalities
- Perform CIP/manual cleaning of both machines after batch completion
- Inspect machines before start; inform maintenance team of issues; assist in minor troubleshooting
- Maintain batch records including batch number, time, temperature, ingredients used, production quantity, and downtime
- Follow all safety instructions while operating heated and rotating equipment; use PPE
Requirements
- Experience operating industrial cooking/mixing machines and sauce processing systems
- Knowledge of batch preparation following recipe instructions
- Ability to monitor temperature, mixing speed, and product consistency
- Experience with CIP/manual cleaning and maintaining hygiene standards as per food safety (FSSC/HACCP)
- Basic maintenance skills to inspect seals, valves, agitators, pumps
- Ability to maintain batch records and production documentation
- Follow safety instructions and use PPE

Machine Operation
- Operate Industrial cooking system for batch cooking, mixing, emulsifying sauces, maintaining correct temperature, mixing speed, and time
- Operate Sauce processing and cooking system for transfer, processing, and discharge of sauce, feeding sauce to packing machines (sachet / 1 kg pouch line)
- Ensure smooth coordination between both machines (one operator handling both sequentially)
Batch Preparation
- Follow recipe instructions for each batch (ingredients, quantity, sequence)
- Load raw materials into Stephan machine correctly
- Monitor batch consistency, colour, and texture
Process Monitoring
- Check temperature and cooking time
- Check mixing/emulsification consistency
- Check flow of product through the processing systems
- Identify abnormalities (burning, improper mixing, leakage, etc.)
Cleaning & Hygiene
- Perform CIP/manual cleaning of both machines after batch completion
- Maintain hygiene standards as per food safety (FSSC/HACCP)
- Ensure no cross contamination between products
Basic Maintenance
- Inspect machines before start: seals, valves, agitators, pumps
- Inform maintenance team in case of noise, vibration, leakage, or breakdown
- Assist in minor troubleshooting (as trained)
Documentation
- Maintain batch records: batch number, time, temperature, ingredients used
- Record production quantity and downtime
Safety Compliance
- Follow all safety instructions while operating heated and rotating equipment
- Use PPE: gloves, safety shoes, hairnet, apron
- Ensure safe handling of hot product
