Preparation duties
- Prepare and organize daily mise en place for the Japanese kitchen.
- Wash, cut, slice, portion, and prepare vegetables, fruits, meat, seafood, and other ingredients.
- Support preparation for sushi, sashimi, ramen, tempura, robatayaki, donburi, sauces, and other menu items.
- Prepare basic sauces, dressings, marinades, stocks, broths, and other kitchen preparations.
Food handling and storage
- Follow knife-handling techniques and use kitchen equipment safely.
- Label, date, cover, store, and rotate ingredients using FIFO procedures.
- Monitor freshness and quality and report damaged, spoiled, or low-quality products.
- Maintain temperature control and proper handling of fresh food products.
- Maintain portion control and minimize food waste.
Kitchen operations
- Keep workstations, cutting boards, knives, utensils, equipment, and preparation areas clean and sanitized.
- Follow HACCP, food safety, hygiene, and sanitation procedures at all times.
- Ensure ingredients are ready before service and support chefs during busy periods.
- Assist with receiving, checking, storing, and replenishing kitchen supplies.
- Assist with kitchen opening and closing procedures and support other sections when required.
Role requirements
- Ability to prepare mise en place and ingredients for a Japanese kitchen.
- Safe knife-handling and kitchen-equipment practices.
