Role Overview
Brodflour is hiring a full-time Pastry Cook for its urban mill and bakery.
The role supports daily pastry production in a fast-paced bakery using fresh-milled flour, naturally fermented bread, laminated pastry, and seasonal baked goods.
Core Responsibilities
- Produce croissants, laminated pastries, cookies, muffins, financiers, madeleines, cakes, fillings, creams, and seasonal products.
- Laminate and sheet croissant and other laminated doughs.
- Follow recipes, production schedules, and established procedures consistently.
- Assist with proofing, finishing, baking, and daily pastry bake-off.
- Prepare fillings, garnishes, toppings, and other pastry components.
- Monitor ingredient levels and report production or inventory needs.
- Store, label, rotate, and handle ingredients and finished products properly.
- Maintain a clean, organized, and sanitary workstation and bakery production area.
- Collaborate with pastry, bread, milling, and kitchen teams during busy production periods.
Candidate Requirements
- Previous professional bakery or pastry experience is required.
- Experience using a dough sheeter and working with laminated doughs is required.
- Candidates must understand basic pastry production techniques and accurately follow recipes and scaling instructions.
