Position Summary

  • The Executive Chef is fully responsible for leadership, management, financial performance, food quality, food safety, staffing, training, and day to day operation of the kitchen.

Key Responsibilities

  • Take full responsibility for daily kitchen operation
  • Ensure all food is produced to highest quality and consistency
  • Manage kitchen staff and ensure duties are completed
  • Implement standard operating procedures
  • Attend operational meetings and recommend improvements

Financial Management & Cost Control

  • Accountable for food cost percentages and kitchen profitability
  • Prepare and manage annual kitchen budgets
  • Analyze food cost reports and implement corrective actions
  • Manage payroll costs and labor scheduling
  • Control waste and monitor utility consumption

Purchasing & Inventory Management

  • Responsible for purchasing all food products and supplies
  • Source products from approved suppliers
  • Maintain proper inventory levels and conduct stock counts
  • Ensure proper receiving, storage, and rotation procedures

Food Safety, Hygiene & Compliance

  • Ensure compliance with local health regulations and HACCP
  • Maintain temperature control, labeling, and cleaning schedules
  • Conduct food safety inspections and audits
  • Maintain compliance records

Menu Development & Product Innovation

  • Design seasonal and permanent menus
  • Develop recipes, costing sheets, and presentation standards
  • Lead product development and culinary innovation

Training & Staff Development

  • Lead, mentor, and develop kitchen employees
  • Create structured training programs
  • Conduct performance evaluations and coaching

Team Leadership & Workforce Management

  • Recruit and interview kitchen positions
  • Prepare staff schedules and manage attendance
  • Foster a positive working culture

Quality Assurance

  • Maintain consistency in food quality and portion control
  • Conduct daily quality checks
  • Monitor customer feedback

Cleaning & Kitchen Maintenance

  • Ensure kitchen is clean and organized
  • Implement cleaning schedules
  • Maintain equipment and report issues
