Job summary

Manage established procedures for ordering, receiving, storing, distributing, and paying for items.

Formulate an approved vendors list covering all purchasing categories.

Education and experience

  • A four-year bachelor’s degree in Finance and Accounting or a related major, or at least two years of purchasing or related experience.

Purchasing and inventory

  • Generate accurate and timely reports and verify information or data.
  • Assist the Executive Chef with food, beverage, and controllable purchasing.
  • Order food and beverage based on business needs.
  • Maintain food and beverage budgets, inventory levels, dating, rotation, and requisitions.
  • Receive and inspect deliveries and verify invoices against shipment specifications.
  • Maintain sanitation, safety, storeroom security, controllable logs, and beverage records.

Accounting and controls

  • Use computer programs to perform daily and period-end food and beverage costing.
  • Complete period-end inventory and calculate food and beverage inventory figures.
  • Administer invoices according to proper bookkeeping procedures.
  • Communicate price and product availability issues to the F&B Director and Executive Chef.
  • Submit timely reports and ensure profits and losses are documented accurately.
  • Monitor applicable taxes and support accounting and budgeting policies.

Leadership and administration

  • Lead, influence, and encourage others while promoting sound financial and business decisions.
  • Address disciplinary situations consistently and complete performance reviews on time.
  • Develop goals and plans to prioritize, organize, and accomplish work.
  • Interact with kitchen staff, vendors, and the Executive Chef.
  • Attend pertinent meetings and provide direction on financial resource controls.
