Role Overview

The Hygiene Officer supports food-safety, hygiene, and sanitation standards across restaurants and related food operations.

The role conducts inspections, maintains records, trains employees, and follows up corrective actions under the Group Executive Chef.

Compliance and Audits

  • Monitor food-safety policies, HACCP procedures, municipality requirements, and UAE regulations.
  • Conduct routine, scheduled, and unannounced inspections across food-operation areas.
  • Prepare reports with findings, risk levels, corrective actions, owners, and deadlines.
  • Support regulatory, third-party, certification, and client inspections.
  • Escalate serious, repeated, or overdue non-compliance and recommend preventive measures.

Food Safety Systems

  • Support HACCP implementation, verification, and continuous improvement.
  • Review critical control point records, temperature logs, receiving documents, and cleaning schedules.
  • Maintain accurate, complete, traceable, and retained food-safety records.
  • Participate in traceability exercises, product withdrawals, and recalls.

Operations and Training

  • Inspect receiving, storage, stock rotation, product condition, supplier status, and batch traceability.
  • Verify cleaning, disinfection, pest control, equipment, and facility standards.
  • Deliver food-safety, hygiene, allergen-awareness, cleaning, sanitation, and induction training.
  • Assist with food-safety incident investigations, evidence collection, root-cause analysis, and corrective action plans.
  • Prepare reports, track open actions, analyse recurring issues, and participate in food-safety meetings.

Qualifications and Experience

  • Recognised HACCP training or certification is required.
  • Two to four years of relevant food-safety or hygiene experience is required, preferably in hospitality food operations.
  • Experience with audits, training, corrective actions, and HACCP documentation is required.
  • Knowledge of food microbiology, contamination, temperature control, allergens, sanitation, pest control, and traceability is required.
  • Familiarity with Dubai and UAE food-safety requirements is required.
  • Proficiency in Microsoft Excel, Word, email, and digital record-keeping systems is required.
  • Good written and spoken English is required.

Preferred Qualifications

  • A diploma or bachelor's degree in a relevant food-safety, environmental health, microbiology, or hospitality field is preferred.
  • Additional food-safety, internal auditing, allergen-awareness training, or languages are advantageous.
