About the Role
Elevate Careers is seeking an experienced Head Chef to lead the kitchen brigade at a premium Japanese dining destination in Sharjah. The role requires deep expertise in authentic Japanese cuisine, strong leadership, and the ability to manage kitchen operations, menu development, and food cost control.

Responsibilities
- Lead, manage, and inspire the entire kitchen team to deliver exceptional Japanese dining experiences
- Design, develop, and regularly refresh menus featuring authentic Japanese cuisine
- Maintain the highest standards of food quality, consistency, taste, and presentation across all sections
- Oversee all kitchen operations including prep, service, plating, and hygiene standards
- Manage food cost, wastage control, stock rotation, and supplier relationships
- Ensure full compliance with UAE food safety regulations and HACCP standards
- Train, mentor, and develop junior kitchen staff including Commis and Demi Chefs
- Collaborate with the F&B Manager and senior leadership on menu costing and profitability
- Drive a culture of culinary excellence, discipline, and continuous improvement in the kitchen
- Coordinate kitchen logistics during events, promotions, and VIP dining experiences
Requirements
- Minimum 5–8 years of culinary experience with at least 2–3 years in a Head Chef or Executive Sous Chef role
- Strong expertise in authentic Japanese cuisine — sushi, sashimi, robata, teppanyaki, ramen, or omakase
- Proven experience leading and managing a full kitchen brigade
- Deep knowledge of Japanese ingredients, techniques, and culinary traditions
- Strong leadership, communication, and team management skills
- Solid understanding of food costing, kitchen budgeting, and inventory management
- HACCP certification and knowledge of UAE food safety standards
- Ability to perform well under pressure in a high volume, fine dining environment
- Creative mindset with the ability to innovate while staying true to authenticity

Preferred Qualifications
- Culinary degree or diploma from a recognized hospitality institution
- Experience working in Japan or at a Michelin starred Japanese restaurant
- UAE or GCC hospitality experience is a strong advantage
- Knowledge of Japanese language is a plus
