Role overview
Head Chef role within the Food and Beverage management team at Chester Zoo.
The role focuses on creative menu development, consistent catering delivery, compliance, and team leadership.
Primary venues include The Square and The Oakfield, with responsibility extending to site-wide events.
Core responsibilities
- Source, select, develop, and procure food products in line with ethical and sustainable purchasing guidelines.
- Work with the Executive Head Chef and Procurement Manager on new projects and catering offers.
- Deliver training for new offers and manage their implementation.
- Manage stakeholders and suppliers to achieve best value for the organisation.
- Support the Executive Head Chef in leading the chef team and improving people performance.
- Manage stock and produce yield to support sales returns and margins.
- Monitor catering trends, market changes, and competitor activity to generate new ideas.
- Support food safety, HACCP, health and safety, and FIFO stock management systems.
Candidate requirements
- Significant senior-level chef experience in a quality food environment.
- Experience with menu development and broad knowledge of global food trends.
