Job Overview

  • Our client is preparing to open a new premium artisan bakery and coffee concept in Ras Al Khaimah.
  • The bakery will specialise in high quality croissants, laminated pastries, viennoiserie and artisan breads.
  • We are seeking an experienced and highly hands on Head Baker who can help establish the bakery from the pre opening stage and remain actively involved in daily production after launch.

Key Responsibilities

  • Support the owner in establishing the bakery production operation from the ground up.
  • Recommend suitable bakery equipment for a compact 4 × 5 metre production kitchen.
  • Assist with equipment specifications, supplier evaluation, installation and commissioning.
  • Plan an efficient kitchen layout and production workflow.
  • Develop the initial menu of croissants, laminated pastries, Danish pastries, brioche, artisan breads and related products.
  • Conduct recipe and product trials before opening.
  • Establish standard recipes, production methods, portion sizes, yields and presentation standards.
  • Personally prepare doughs, perform lamination, manage fermentation and proofing, and complete baking and finishing.
  • Develop daily production quantities based on walk in and delivery demand.
  • Establish ingredient requirements, supplier specifications and stock control procedures.
  • Prepare product costing and help determine commercially viable selling prices.
  • Control food costs, wastage, consistency and product quality.

Candidate Requirements

  • Minimum four years of professional bakery or pastry experience.
  • At least two years of relevant working experience in the UAE.
  • Strong hands on experience producing croissants and laminated dough products.
  • Practical experience producing viennoiserie, brioche and artisan breads.
  • Previous involvement in opening a bakery, pastry kitchen, café bakery or similar food production operation is strongly preferred.
  • Good knowledge of bakery ovens, mixers, dough sheeters, proofers, refrigeration and related equipment.
  • Ability to develop recipes and convert them into consistent commercial production standards.
  • Understanding of production planning, costing, inventory control and waste reduction.
  • Comfortable working independently and within a small startup operation.
  • Able to work effectively in a compact kitchen environment.
  • Good working communication skills in English.
  • Willing to relocate to Ras Al Khaimah when required.

Salary and Benefits

  • AED 7,000–9,000 per month, depending on experience and the practical assessment.
  • UAE employment visa.
  • Basic medical insurance.
  • Other statutory employment benefits in accordance with applicable UAE requirements.
  • Company accommodation and transportation are not presently provided.
