Role Purpose

Lead end-to-end operations of a food production facility serving QSR outlets and other channels.

Ensure safe, consistent, cost-effective, and timely production while coordinating production, quality, food safety, maintenance, inventory, productivity, waste, and dispatch.

Factory and Production Operations

Manage production, processing, packing, storage, and dispatch across the central kitchen or factory.
Plan production from outlet demand, forecasts, inventory levels, and business requirements.
Achieve quality, cost, yield, and timeline targets through SOPs, batch controls, and operating standards.
Improve production capacity, line utilization, throughput, and overall equipment effectiveness.
Coordinate production, procurement, QA, warehouse, maintenance, and distribution teams.

Food Safety and Quality

Ensure compliance with GMP, GHP, HACCP, FSSAI, and company food-safety standards.
Maintain hygiene and sanitation across production, storage, and employee areas.
Ensure approved recipes, specifications, process parameters, portion standards, traceability, batch coding, shelf life, and recall processes.
Investigate complaints, deviations, and non-conformities with QA/QC and close corrective and preventive actions.

Cost and Continuous Improvement

Reduce food, conversion, manpower, utility, and wastage costs while monitoring yield, rejection, giveaway, and process losses.
Track operational KPIs and drive automation, process improvement, manpower optimization, Lean, Kaizen, and 5S initiatives.
Lead structured problem-solving and root-cause analysis for recurring operational issues.

People and Inventory Management

Lead, train, develop, schedule, and evaluate supervisors, operators, helpers, and support staff.
Plan manpower for production volumes and shifts and monitor attendance, productivity, discipline, training, and performance.
Coordinate raw material and packaging availability, FIFO/FEFO practices, inventory controls, consumption, batch, yield, and production records.

Maintenance and Dispatch

Coordinate preventive and breakdown maintenance and monitor equipment availability, downtime, refrigeration, cold rooms, freezers, boilers, HVAC, and utilities.
Support equipment installation, commissioning, CAPEX projects, and process expansion.
Coordinate warehouse and logistics teams for timely, accurate, temperature-controlled dispatch with documentation, traceability, and product integrity.

Compliance and KPIs

Ensure compliance with food safety, labour, fire, environmental, statutory, and factory regulations.
Prepare for internal, customer, regulatory, and third-party audits and close audit findings.
Track production achievement, on-time dispatch, yield, wastage, rejection, conversion cost, labour productivity, downtime, OEE, inventory variance, complaints, audit scores, attrition, absenteeism, and energy cost.

Candidate Profile

Bachelor's degree in Food Technology, Food Science, Engineering, Operations, Production, or a related discipline.
MBA or PGDM in Operations or Supply Chain is an advantage.
8–12 or more years of relevant experience in food manufacturing, QSR commissaries, central kitchens, FMCG, or related operations.
Experience managing high-volume production and multiple shifts.
Strong leadership, communication, and data-driven decision-making capabilities.
