Job Summary
Monitor and control food and beverage costs across restaurant operations.
Identify cost variances and opportunities to improve profitability.
Key Responsibilities
- Monitor daily and monthly food cost and inventory performance.
- Prepare recipe costing and maintain accurate product costs.
- Monitor purchasing prices, supplier costs, and price variances.
- Conduct and supervise regular stock counts and inventory reconciliation.
- Analyze food consumption, wastage, transfers, and stock variances.
- Monitor actual food cost against theoretical or standard food cost.
- Identify cost-saving opportunities without compromising quality.
- Prepare regular cost-control reports for management.
- Coordinate with Kitchen, Purchasing, Store, Operations, and Finance teams.
- Support menu engineering and profitability analysis.
Requirements
- Proven experience as an F&B Cost Controller, preferably within restaurants, hospitality, or central kitchen operations.
- Strong knowledge of food costing, inventory, purchasing, and restaurant cost control.
- Good analytical skills and attention to detail.
- Strong Excel skills and experience with POS, ERP, or inventory systems.
- Ability to analyze variances and recommend corrective actions.
- Good communication and reporting skills.
