Job Summary

  • Accountable for overall success of daily kitchen operations.
  • Exhibits culinary talents by personally performing tasks while leading staff.
  • Works to improve guest and employee satisfaction while maximizing financial performance.

Core Work Activities

  • Lead kitchen management team and provide direction for day to day operations.
  • Understand employee positions to perform duties in their absence.
  • Provide guidance and direction to subordinates, setting performance standards.
  • Review staffing levels to meet guest service, operational, and financial objectives.
  • Supervise and coordinate activities of cooks and workers in food preparation.

Setting and Maintaining Goals

  • Develop and implement guidelines for purchasing and receiving areas.
  • Establish performance, budget, and team goals.
  • Communicate safety procedures and ensure employee understanding.
  • Manage department controllable expenses including food cost, supplies, uniforms, and equipment.

Ensuring Culinary Standards

  • Provide direction for menu development.
  • Monitor quality of raw and cooked food products.
  • Determine food presentation and create decorative displays.
  • Ensure compliance with food handling and sanitation standards.
  • Maintain purchasing, receiving, and food storage standards.

Ensuring Exceptional Customer Service

  • Support service behaviors that exceed customer expectations.
  • Manage day to day operations to meet quality standards and customer expectations.
  • Interact with guests to obtain feedback on product quality and service.
  • Respond to and handle guest problems and complaints.

Managing Human Resources

  • Identify developmental needs and coach/mentor others.
  • Train kitchen associates on cooking fundamentals and plate presentations.
  • Administer performance appraisal process for direct report managers.
  • Manage employee progressive discipline procedures.
