Role Expectations
- Supervise and coordinate activities of cooks and workers
- Determine food presentation and create decorative displays
- Ensure proper portion, arrangement, and garnish
- Monitor quantity of food prepared
- Inform service staff of menu specials and out of stock items
- Prepare special meals or substitute items
- Assist cooks and kitchen staff with various tasks
- Monitor stock of kitchen supplies and food
- Maintain kitchen logs for food safety program
- Ensure quality of food items and notify manager of issues

Specific Duties General Kitchen
- Wash and disinfect kitchen area to ensure sanitary conditions
- Set up and break down work station with required mise en place
- Follow sanitation and cleaning procedures
- Follow personal hygiene procedures
- Follow food safety and handling policies (FIFO, labeling, Cold Chain)
- Prepare potentially hazardous foods at correct temperature per HACCP
- Maintain kitchen logs for food safety compliance
- Monitor stock and communicate shortages
- Use kitchen tools safely and appropriately
- Use measuring tools to precisely measure ingredients
- Prepare and cook food according to recipes and quality standards
- Test foods for sufficient cooking
