Position Summary

Prepare special meals, substitute items, and cold foods for hotel food and beverage operations.

Cook food according to recipes, quality standards, presentation standards, and food preparation checklists.

Monitor food quality and quantity while coordinating with chefs and food and beverage service staff.

Culinary Responsibilities

  • Regulate temperatures of ovens, broilers, grills, and roasters.
  • Thaw food from freezer storage in the refrigerator and maintain food logs.
  • Ensure proper food portioning, arrangement, garnish, quality, and presentation.
  • Communicate assistance needs during busy periods.
  • Inform the Chef about excess food items for daily specials.
  • Inform food and beverage service staff about menu specials and unavailable items.

Workplace Responsibilities

  • Follow company, safety, security, and quality policies and procedures.
  • Report maintenance needs, accidents, injuries, and unsafe work conditions.
  • Support management with hiring, training, scheduling, evaluation, counseling, discipline, and coaching.
  • Maintain professional appearance, confidentiality, positive working relationships, and guest service standards.
  • Stand, walk, bend, twist, reach, and handle objects weighing up to 25 pounds without assistance.

Preferred Qualifications

  • Technical, trade, or vocational school degree.
  • At least 3 years of related work experience.
  • No supervisory experience is specified as required.
  • No license or certification is specified.
