About the Role
Chef de Cuisine specializing in Italian cuisine for a luxury beachfront hotel in Abu Dhabi, UAE.
The role leads the full culinary operation of a high-volume Italian restaurant serving lunch and dinner.
What You Will Do
- Lead kitchen operations and maintain high standards of food preparation, presentation, and service.
- Develop and refresh menus featuring authentic Italian flavors, seasonality, and creativity.
- Ensure consistent taste, quality, portioning, and presentation across service periods.
- Oversee mise en place, production schedules, and execution for lunch and dinner.
- Supervise, train, and mentor the culinary team.
- Control food costs, portion sizes, waste, purchasing, suppliers, inventory, and kitchen expenses.
- Ensure compliance with HACCP, food safety, and hygiene standards.
- Collaborate with the Executive Chef and food and beverage team on promotions and events.
What You Bring
- Strong authentic Italian cuisine experience is required.
- Chef de Cuisine or Senior Sous Chef experience specializing in authentic Italian cuisine is required.
- Deep knowledge of regional Italian culinary traditions, ingredients, and techniques is required.
- Luxury hotel or high-end restaurant kitchen leadership experience is required.
- Strong leadership, team development, and communication skills are required.
- Understanding of food costing, menu engineering, and HACCP compliance is required.
- Ability to work in a fast-paced, high-standard, high-volume kitchen is required.
What's Offered
- Basic salary is AED 14,000 to AED 15,000 per month.
- Accommodation allowance is AED 6,000 per month.
